Australian venison kabana recipe
00:34 – Step 1 – slice up 567 grams of pork fat.
01:15 – Step 2 – mince pork fat.
01:28 – Step 3 – measure 567 grams of pork fat.
01:41 – Step 4 – spread out mince.
01:56 – Step 5 – mix pork fat with venison mince.
02:05 – Step 6 – add herbs & spices.
02:49 – Step 7 – add 2/3 cup of water.
03:02 – Step 8 – mix fat, mince & water.
03:13 – Step 9 – mince again.
03:35 – Step 10 – preheat smoker to 120° then reduce to 90°.
04:10 – Step 11 – load casing onto piping press.
05:07 – Step 12 – fill press with kabana mince meat.
05:57 – Step 13 – slowly pipe mince into casing.
06:20 – Step 14 – massage kabana to equal widths.
06:32 – Step 15 – create links of 3 by twisting kabana
07:05 – Step 16 – hang kabana in smoker for 8 hours at 90°.
Australian venison sausage recipe
07:33 – Step 1 – measure 16 kg of venison mince.
08:09 – Step 2 – mix 4 kg of minced pork fat.
08:34 – Step 3 – add herbs and spices.
09:05 – Step 4 – add 3 lt of chilled water.
09:12 – Step 5 – fold mixture together
10:10 – Step 6 – fill press with mince
10:11 – Step 7 – load casing onto press
10:14 – Step 8 – pipe mince into casing.
10:36 – Step 9 – twist and tie sausages into links of 3
11:10 – Step 10 – cook and eat.
